Christmas Eve Countdown with Chef Laudico


Have you begun preparations for your Noche Buena yet? You’d be surprised at how early some households begin planning for the centerpiece of holiday meals. After all, Christmas eve dinner is a major production number in almost every household, and it is especially so when that household is composed of two acclaimed chefs and their extended family.

Such is the case of the Laudicos. Every year, Chef Lau hosts Christmas Eve dinner for his family in his own home, and that means a minimum of four courses for at least a dozen people, which translates into a ton of cooking. Pulling it off is no mean feat, not even for this seasoned restaurateur and caterer.  Aside from relying on his ever-dependable La Germania range, he draws from his years of experience in cooking for large groups of people to be able to create masterpiece meals year after year.

The secret? It’s all in the preparation.

The power of prep
“I spend the entire day cooking for Christmas dinner,” shares Chef Lau, “but you don’t have to do everything on the day itself.” In fact, a lot of your success rests on doing the exact opposite. Planning ahead and preparing your tools and ingredients beforehand often spells the difference between a disastrous dinner and a well-executed Noche Buena. 

Chef Lau always includes his diners’ likes and dislikes when he prepares meals, and for the holidays, he even includes them in the planning, which can be done even a couple of weeks in advance. “Before I make the menu, I ask my family and guests if there’s something in particular they would like. They always have special requests, and every year it’s something different. From those requests, you can begin to shape the menu.”

Then comes the fun part – shopping. “The secret to any good dish is to start with the very best ingredients that you can find. If you start with good ingredients, there’s a good chance that the dish will come out good. If you start with bad ingredients, then nothing you can do to them, no amount of cooking, will make them be good,” the chef explains. “So you have to know where to get your ingredients, and you can shop for them well ahead of time. For fresh greens and seafood, it’s always best to buy them on the day you’re cooking them, but the other things, like meat, you can probably get a couple of days before, well-frozen.”

Frozen meat require a prep step of their own—defrosting. Laudico stresses that this is an essential step in your holiday meal-making. “It’s important that you defrost your meat properly. Cold, partially frozen meat will take longer to cook and may be undercooked on the inside, or it could be dry and tasteless.” Plan for the time it will take for the meat to slowly thaw out in your refrigerator. For big roasts, that might take as much as 48 hours. For smaller items like whole chickens, 24 hours should be more than enough.

Choosing your tools
Of course, choosing what to work with in the kitchen is important, too. A reliable cooking range or oven that will withstand the rigors of everyday cooking as well as the occasional increased demand of preparing large amounts of food for celebrations is of outmost importance.

You also have to choose the kind of energy you want to cook with—gas or electricity—and pick a range based on that.

Most condominiums no longer allow gas ovens among tenants, citing safety reasons. But even if their condo building allows for gas cooking ranges, Chef Lau chose to go with an electric oven in his home. “It’s so responsive,” he says, “the temperature is so easy to control and maintain throughout the cooking process.”

Some cooking processes are reliant on being able to maintain a low, even temperature, or a searing hot one. Chef Lau’s range of choice offers a magnificent temperature range, reaching temperatures high enough for broiling his favorite holiday roasts and low enough to serve as a dehydrator to make dried fruit leathers. What’s even more impressive is that an electric oven can maintain that temperature for extended periods of time, ensuring that whatever you’re cooking is not subjected to drastic temperature changes while it cooks. “Of course, every oven is unique, too, so you have to become familiar with how your oven works by using it as often as you can. That familiarity gets you the best results,” said Lau.

So there you have it. The secrets to a masterpiece of a meal for Noche Buena – preparation, time management, and the right partner in the kitchen. From one family’s hearth to your own: happy cooking, everyone!

Monsoon Blockchain Storage USA (“Monsoon”) was formally introduced to the Philippine market


Data storage capacity needs are doubling every one to two years. What happens every minute on the internet creates the need for massive data storage.

The opportunity that cloud computing provides to business has led to a shift in I.T. from traditional models to cloud models. This shift will hit over USD 1 trillion annually over the next decade.

It is for this reason that businesses have been prompted to establish relationships with multiple cloud providers across numerous geographies, in addition to maintaining some of their own hosted or colocated I.T. capabilities by this shift, and this is playing out very well for many companies – Amazon
being a very good example.

In fact, as of the end of the 2nd quarter of 2018, 55% of Amazon’s consolidated operating income is currently coming directly from their Cloud data storage business or AWS.



At a recent media forum held in Sofitel Hotel in Manila, Monsoon Blockchain Storage USA (“Monsoon”) was formally introduced to the Philippine market. Monsoon is a blockchain-based decentralized protocol that aims to construct a worldwide storage and cloud optimization network of users and providers based on their innovative technology which distributes more than ample storage and optimizes the cloud.

The event was spearheaded by Monsoon’s Chairman and Co-founder Michael J. Woods, former CEO of the prestigious Rothschild & Co. Asset Management Inc., USA, and a world-renowned finance expert; and, Gracie Llana-Walker, the former Director of Technology for the Archdiocese of LA and Montebello USD and an active community leader, who was appointed as Monsoon’s Southeast Asian Consultant for Strategic Partnerships. During the event, Mr. Woods discussed global investment trends, cloud-based storage solutions and wealth management. He also identified a number of challenges that currently exist with the movement to cloud computing; albeit having unlocked a vast number of opportunities as well. He also stressed that investors should not only consider these trends and usage growth, but also to take action upon them in some way.

Mr. Woods explained that Monsoon seeks to address the two main limitations of cloud computing, namely: a centralized network of servers; and, limited optimization of data cost correlated to data usage. Monsoon’s goal is to solve limited cloud optimization technology by optimizing client data storage across multiple cloud based providers. At the same time, Monsoon’s blockchain security protocol solves many security risks inherent in cloud computing.

Atty Raji Mendoza of Mendoza, Anterro & Associates law firm, however, raised his concern on whether this sector should be more regulated or not, since some economic zones offering Fintech opportunities have tightened the noose by requiring these companies to be backed up by hard assets, among other conditions. These restrictions, however, seem to run contrary to its nature of
decentralized transactions.

Despite this, Ardy Mejorada, Secretary of World Blockchain Organization (WBO), ASEAN, an organization registered under the United Nation Economic and Social Council (UN ECOSOC), welcomed the entry of Monsoon in Manila and said “We look forward to collaborating with the company in sharing best practices and disseminating the effective adoption of blockchain in general via the Monsoon company.”

Mr. Woods believes that blockchain and Monsoon will impact almost every business sector globally. “With the vast demands presented by the digital era, Monsoon, through its seasoned management team, specialized engineering team, and industry partners such as IBM, is more than prepared and able to help businesses manage the explosion of data created and stored into their
cloud-based systems and link them to our blockchain technology platform so they can keep stride with the 4th Industrial Revolution,” Mr. Woods added.

Digital technology in building infrastructure



. Hans T. Sy, chairman of the Executive Committee of SM Prime Holdings, Inc., delivered the keynote speech at the 44th National Convention and Technical Conference of the Philippine Institute of Civil Engineers (PICE), held recently at the SMX Convention Center in Pasay City. With this year’s theme: “Integrating Advanced and Digital Technology in Building Infrastructure”, Sy talked about the benefits of advancing technology in construction, as well as SM’s Disaster Resiliency efforts. He also highlighted the importance of Disaster Risk Resilience and the role of engineers as critical players in nation building. More than 15,000 civil engineer members of PICE attended the event.

400 GSK Philippines employees visited 16 Gawad Kalinga and two Smile Train sites for Orange Day




Volunteerism involves a person or a group of people participating in projects that are beneficial to the community’s wellbeing. Volunteerism is the spirit behind GSK’s Orange Day, when employees get one paid day off to volunteer at a non-profit organization of their choice.

On November 23, 400 employees of GlaxoSmithKline (GSK) Philippines visited 16 Gawad Kalinga sites and two Smile Train partner institutions in the country, including Antipolo in Rizal, Sagay in Negros Occidental, Naga in Camarines Sur, Quezon Province, Laguna, Pasig-San Rose, Muntinlupa, Pasig, Sta. Mesa, Bataan, Cagayan de Oro, Cebu, Caloocan, Davao, Gen. Santos, La Union and Las Pinas.



“We encourage our employees in GSK to volunteer and contribute to our local communities.  It helps our employees gain new experiences and skills, creating a deeper understanding of patient needs. Employees come back with a different view and serve as change agents in GSK,” said Sriram Jambunathan, General Manager for GSK Philippines Pharmaceuticals.

All GSK employees are entitled to employee volunteering, which means they can take one paid day off per year to pursue an authorized charity activity. Although there are multiple ways of volunteering at GSK, Orange Day is a key flagship program launched in 2009. 

The company believes that by volunteering, employees are challenged to think differently, develop leadership skills, and heighten cultural agility. Further, GSK believes that they can also be instruments in helping create positive, sustainable change for non-profit partners, and the communities they serve; and that through their experiences, they bring fresh ideas and new energy back to the company.


“One day of volunteering can have impact on the health and well-being of local communities where we operate. As well as this, volunteering is also a great way to demonstrate and live our values outside of the organization,” said Ritesh Pandey, General Manager for GSK Philippines Consumer Healthcare.

Neon eSports bags the coveted Predator League 2019 DOTA 2 Championship Title



Predator once again brings Predator League: Dota 2 Finals—a highly anticipated gaming and youth event in the Philippines. The said competition, in its second year, provides an opportunity to the gaming community in the country to showcase their competence and skills.



Four Semi Finalists—Alpha Gaming from Visayas; Neon eSports from Metro Manila; TaskUs Titans from Luzon and NCGC from Mindanao—compete for the Predator League Championship Title.

After a heated semi-finals, TaskUs Titans won over NCGC, while Alpha Gaming bows to Neon eSports. A well-fought championship battle was witnessed by the audience between TaskUs and Neon, where the latter emerged as winners. 3rd runner-up Alpha Gaming and 2nd runner-up NCGC both win a cash prize of Php20,000 while TaskUs ends the their run with a bridesmaid finish and takes home Php40,000. With a dominant win, Neon eSports bags the coveted Predator League 2019 DOTA 2 Championship Title and wins Php120,000 cash prize.
