King Sue has always been one of the stars of the Filipino Christmas


In the Philippines, there are well-loved Yuletide traditions that we’ve observed for years and are treasured by generations of families.  Having King Sue hams on the Noche Buena table  is one of them. Let’s look at some of these endearing practices that make Christmas in our country like no other.

Caroling

 As soon as November 1 is over, Filipinos immediately take down their Halloween decor and replace them with festive and colorful embellishments to signal the start of Yuletide. Think glittery buntings, the traditional parol made of  bamboo and Japanese paper or Capiz shells laden with Christmas lights and of course, the Christmas Tree. There is no better symbol of Christmas than the Belen, the centerpiece of one’s home decoration.  A representation of the Nativity Scene, it is present in almost all Filipino household.


Noche Buena
It literally translates to “Good Night” in Spanish but for Filipinos, Noche Buena is the ultimate feast on Christmas Eve. Here families get together at 12 midnight and share a lavish banquet prepared by the whole family.   The Yuletide table is filled with all kinds of dishes including King Sue’s Chinese Bone-in Ham and other premium meat products. Salads are the perfect sides to pair with your favorite dishes by King Sue



They’re yummy and easy to do…salads are the most refreshing picks for those who want to shed a few pounds through healthy eating. Aside from helping you maintain fresh, glowing skin, salads are light but filling.  They are also perfect sides to pair with your favorite dishes.

 KING SUE shares these recipes for a variety of salads for lunch, snacks, dinner and any time in between.


1. HAM AND CHEDDAR MACARONI SALAD.  Yes, you can put a twist to your traditional mac and chees just  by adding slices of King Sue Ham. Cooking Time: 10 Minutes

Ingredients: 1 King Sue Pear-shaped Ham, 1 cup cheddar cheese (diced), 450 g pack elbow macaroni (cooked elbow macaroni: al dente), 1 cup parmesan cheese grated, 1 cup chopped celery, 1 onion (chopped), 1/2 cup raisins, 1/2 cup dill pickles (chopped), 1/4 cup mayonnaise, 1/4 cup miracle whip, 2 tsps prepared mustard, salt and pepper.  

Cooking Directions: Dice King Sue ham into 1/2-inch cubes (or bite-sized).  Combine ham and cheese with macaroni (previously boiled and softened), celery, onion and pickle, raisins. Mix in the mayonnaise and mustard; then add salt and pepper to taste. Stir into macaroni mixture, and mix all ingredients well. Top with parmesan cheese and  Chill (for several hours for maximum flavor) until ready to serve. 




2. GERMAN FRANKS SALAD. This easy-to-make German Salad with a vegetable-based mix, and King Sue Franks is great anytime of the day and even for picnics!  Cooking Time: 15 Minutes

Ingredients: 1/4 cup yellow mustard, 2 tsp juice of Lemon, 1 rounded teaspoon granulated sugar, 3 tbsp Olive oil, 1 small white onion, thinly sliced, 1 small cabbage, shredded, 2 tomatoes, diced, 2 tsp pickle relish, salt and freshly ground pepper, 3 pcs King Sue German Franks sliced diagonally. 

Cooking Directions:  In a large bowl, combine the mustard, lemon juice, sugar and Olive oil. Add in the onion, cabbage, tomatoes and pickles, then toss. Season with salt and pepper. Heat a large nonstick skillet over medium-high heat. Pan-fry the hotdog slices and scatter them on top of the salad.



3. SALAD WITH BERRY DRESSING TOP WITH SWEET HAM. Feasting but not fasting on flavor—this is what you get with this salad in sweet, creamy berry-based dressing.

Ingredients: Salad greens, shredded, Carrots, shredded, Diced tomatoes, Corn kernels, Diced King Sue Sweet Ham
For the dressing: ½cup Raspberry vinegar, 1 cup Mayonnaise, 2 tbsps Dijon mustard, 4 tbsps Honey, Salt and pepper to taste
Cooking Time: 7 Minutes

Cooking Directions: In a mixing bowl, mix all ingredients for the dressing and whisk until well-blended. Toss the salad greens, carrots, tomatoes, corn and ham together. Drizzle with the berry dressing. Serve in attractive salad bowls.


4. FRUITS-AND-HAM SALAD. Ham goes well with anything; you can even pair it with your favorite fruits. Brighten up your bowl with fresh fruit salads mixed with King Sue Sliced Hawaiian ham.

Ingredients: 2  Green Apple (or any fruit you like), 1 orange segmented, juice of 1 lemon, 300 gms King Sue Sliced Hawaiian Ham, 1 cup sour cream, ¼ cup all-purpose cream, ½ tsp sugar, 3 tbsp parmesan Cheese, 6 cups or 1 pack of mixed greens, Walnuts, Freshly Ground Pepper, Salt. 
Cooking Time: 10 Minutes

Cooking Directions: Thinly slice the apples. Toss with lemon juice in a large bowl. To make the dressing, combine sour cream and all purpose cream, sugar with salt and pepper. In a large bowl, toss together the mixed greens, King Sue Hawaiian Ham, apples, pineapple juice and orange. Top everything with walnuts and parmesan cheese.

Best ways to start the year with King Sue

This is  the best time to start doing things that will benefit yourself for the  rest of the year. KING SUE suggests five bite-sized resolutions that are simple, doable, and something you might want to try.

The neighborhood zumba class is for free. Allot 30 minutes daily for walking around your area. Limit the partying and get enough sleep.

2. Eat right by eating breakfast. Breakfast energizes you for the day’s load. KING SUE’S HOLIDAY RECIPES BY NEW CHEF-CONSULTANT KATRINA CUA



Christmas  means family get-togethers, reunions with friends, festivities, and of course, tons of food!

King Sue’s new chef-consultant, Katrina “Kat” Cua of katshappyfood.com, has great Christmas recipes using the brand’s ham and assortment of meat products.

She brings her experiences to the fore through easy-to-prepare yet delicious dishes that are perfect for the Noche Buena feast.

A graduate of BS IHM Culinary Arts at Enderun Colleges, Chef Kat worked for some hotels in the country, as well as in France and in a New York bakeshop. She loves French cuisine and infusing it with Asian flavors.  She grew with King Sue and is very fond of its meat products.

Chef Kat believes that no Christmas table is ever complete without the traditional King Sue Chinese Bone-in Ham and other premium ham and meat products.

“There’s  King Sue’s Sweet Ham prepared with a touch of sweetness.  The smokey flavor of  Pina Ham, meanwhile, goes well with cheese and wine spread. There are other King Sue products that are great for the Christmas menu. I love their thick cut boneless bacon slices; you  cannot find anything like them anywhere. I also like other bacon cuts such as bits and  cubes which I add  to my stir-fried vegetables and stews,” she said.

                        KING SUE CHORIZO BILBAO and Apple Turnover
Ingredients:
-        ¼ cup unsalted butter
-        ½  teaspoon orange zest
-        1 ½ tablespoons fresh orange juice
-        ½  kilo granny smith apples, peeled and chopped
-        ½  KING SUE CHORIZO BILBAO, chopped
-        3 tablespoons brown sugar plus extra to sprinkle on top
-        ½  tablespoon all-purpose flour
-        1/8  teaspoon ground cinnamon
-        1/8 teaspoon ground nutmeg
-        Dash of salt
-        2 sheets store-bought frozen puff pastry, defrosted

Procedure:
1.     Preheat the oven to 400 F.
2.     Prepare the egg wash (1 egg yolk, 1 tbsp, milk, pinch of salt) . Mix all the ingredients and set aside.
3.     In a saucepan, melt butter and sauté chopped apples. Add the orange juice and cook the             apples until soft. Add the KING SUE CHORIZO BILBAO, brown sugar, flour, cinnamon, nutmeg, and salt. Turn off the heat and add the orange zest. Cool and set aside.
4.     Cut each puff pastry sheet into 4 equal square portions and keep chilled until ready to fill.
5.      Place 1/3 cup of the apple mixture on half of the square. Fold the pastry diagonally over the apple and KING SUE CHORIZO BILBAO mixture to form a triangle. Seal by pressing the edges with a fork. Transfer to a sheet pan lined with parchment paper. Brush with egg wash and sprinkle with brown sugar.
Bake for 20 minutes until brown. Serve warm or at room temperature.
Serves: 8




                    HONEY CITRUS KING SUE BONE-IN HAM 
-        For 2kg KING SUE CHINESE HAM BONE-IN (RAW)

Cooking Liquid:
Ingredients:
-        1 cup sugar
-        1 ½  crushed pineapple
-        2 ½ cups freshly squeezed orange juice
-        2 cups 7up
-        ½ cup rum
-        3 tablespoon bay leaves
-        2 tablespoon crushed garlic
-        1 tablespoon whole black pepper
-        1 tablespoon lemon zest
-        1 tablespoon orange zest
-        1 tablespoon lime zest
-        1 ½ cup honey
-        ½ cup orange marmalade
-        Juice of 2 lemons
-        Juice of 1 lime

Preparation:
1.     Remove ham from packaging.
2.     Carefully scrape the starch covering the ham. Wash completely.
3.     Place ham in a pan. Cover with enough water and set aside for 4 hours. Every hour, change the
       water of the ham. This is done to remove the excess salt. Note: Do not soak overnight.

Cooking instructions:
1. Place the ham in a pan with approximately 3 liters of water or enough to cover the ham,
with skin facing down.
2. Slowly bring to a boil, skimming away any foam that forms on top. Gently simmer for 30
minutes. Drain and discard the water.
3. Mix all the ingredients of the cooking liquid in to the pan. Add 6 cups of water, then place
the ham with the skin facing up as not to stick on the pan.
4. Bring to a boil and once it reaches the boiling point, reduce the heat. Simmer until fully 
cooked.
5. One indication that the ham is cooked is when you can easily pull the fork back out. Another
indication is when the meat starts to separate from the bone as well as the skin with meat. Be careful not to overcook as it will fall apart.
6.     Remove the ham from heat. Marinate in the cooking liquid for a minimum of 12 hours.
7.     For better presentation, remove the skin and place brown sugar on top and torch the ham 
       until it caramelizes.



                                       King Sue Bacon and Onion Tart
Ingredients:
-        4 tablespoons butter
-        2 tablespoons oil
-        2 medium sliced onions, caramelized
-        2 cups KING SUE BACON SLICES, cut into lardons
-        1 tablespoon mustard
-        1 tablespoon dried thyme
-        2 sheets store-bought Puff Pastry (12x 12 inch)
-        Pepper

Egg wash:
-        1 egg yolk
-        1 tablespoon milk
-        Salt

Instructions:
1.     Preheat the oven to 425 F.
2.     Prepare the onions, and bacon. Set aside.
3.    Prepare the egg wash (1 egg yolk, 1 tbsp, milk, salt) . Mix all the ingredients and set aside.
4.     Make ridges all around the edge of the puff pastry. Spread the mustard on the puff pastry. 
       Add the KING SUE BACON SLICES and caramelized onions on top of the puff pastry, not
       exceeding the ridges. Sprinkle with dried thyme and freshly cracked pepper. Brush edges
       with egg wash.
5.     Bake until pastry is golden brown about 25 minutes. Let cool on a wire rack for 5 minutes.
       Cut into squares and serve immediately.

King Sue Home Party Planning Tips



Partying is fun with all the food and festive decors you get to share with family and friends.  Hosting one at your own home—with the budget, menu, and motif to consider plus guests to entertain— could be both exciting and challenging, But if you have the knack for organizing events and if you want to personalize your get-togethers, parties will always come surprisingly easy. Back to School “Bring your own baon” tips from King Sue

1. Plan ahead. A well-thought out weekly menu will save you time. Make a calendar and assign specific meals daily, infusing healthy combinations of fish and vegetables with meat. Sit down with your kids when planning the menu and take them with you for grocery shopping. Surf the Internet or exchange recipes with friends. The secret is to make the menu as balanced and as exciting to eat  as possible.

2. Cook in batches. Assign two days weekly—preferably Sunday and Wednesday—for marketing and cooking. Prepare the main meats and pack them in plastic wares with your special marinade. Kings Sue whips up Delicious Christmas Traditions


Its that time of the year when Moms like us think of what to prepare and cook for our loved ones on our Noche Buena table.  King Sue whips up delicious recipes in time for the holidays.

It’s the most wonderful time of the year to be with family and friends and share good food. Made with love at the heart of every kitchen  and helping each other cook up a delightful Holiday feast is a lovely tradition. King Sue has some suggestions for that perfect Christmas spread—from ham steaks, burritos, pasta, gratin, and bruschetta, to a host of other recipes—that will not only make this year’s Yuletide celebration  more meaningful:


GLAZED HAM STEAK

Glazed Ham Steak


Ingredients:
1 kilo King Sue Sweet Ham, cut into 2 inch slices
1 can crushed pineapple
2 Tbsp. brown sugar / muscovado sugar
1 Tbsp. butter
3 Tbsp. honey
Shallow baking pan
2 tbsp. vegetable oil
Heavy skillet

Cooking Directions:

* Open the can of crushed pineapple and pour the contents into a sauce pan.
* Add the brown sugar, butter and honey to the pan, and stir to combine.
* Turn the stove on medium and heat the glaze until hot.
* Take it off the burner and let it cool for about five minutes.
* Preheat the oven to 180 degrees C or 350 degrees F.
* Line a shallow baking pan with aluminum foil, and place the ham steaks in the baking pan.
* Pour the pineapple glaze over the steaks. Spread the glaze completely over the steaks.
* Cover the pan with a sheet of aluminum foil and put it in the oven.
* Cook the glazed ham steaks 18 to 20 minutes.
* Take off the aluminum foil covering the ham steaks and let them stand for five minutes.
Serve while warm.


PAELLA BURRITO
Paella Burrito


Ingredients:

2 tbsp  olive oil
1 small onion, minced
1 small tomato, diced
1 small green bell pepper, diced
1 pc chicken breast, strips
½ King Sue Chorizo Filipino
3 slices King Sue (your choice of ham)
¼ tsp paprika
Salt and pepper
1 cup cooked rice
Tortilla (optional)

Cooking Directions:

* Heat the pan, pour in olive oil. Sauté the chorizo for a few seconds to get its flavor, then remove chorizo from the pan.
* Sauté onion, tomato, and chicken.  Let the chicken for a few minutes.
* Add in the ham and chorizo.
* Season it with paprika, salt and pepper.
* Add in the cooked rice, turn off the heat and add the bell pepper.
* Serve on plate or wrapped in tortilla.


PENNE PASTA WITH HUNGARIAN SAUSAGE

Penne Pasta with Ham Sausage


Ingredients:

1 pound penne pasta
2 tablespoons olive oil
1/2 medium yellow onion, diced
1 tablespoon garlic, chopped
1 tablespoon Italian seasoning mix
1/4 teaspoon crushed red pepper flake, optional
4 King Sue Hungarian-Style Sausage, cut into 1/2-inch slices
1 (28-ounce) can diced tomatoes, drained
salt and freshly ground black pepper
1/4 cup heavy cream
¼ cup parmesan cheese
Basil leaves, for garnish
Store bought garlic bread.



Cooking Directions:

* Bring large pot of salted water to a boil over high heat. Cook pasta according to package directions.
* In a large deep skillet over medium-high heat, add olive oil.
* Add onion, garlic, Italian seasoning mix and red pepper flakes, if using.
* Stir frequently and cook until the onions are soft and fragrant, about 3 to 4 minutes
* Add sausage and cook for 1 minute
* Add can of crushed tomatoes, stirring all the ingredients together to combine.
* Season with kosher salt and freshly ground black pepper, to taste and let simmer for 10 minutes.
* Stir in heavy cream and mix well.
* Drain the pasta and add directly to the skillet with the sauce Toss the pasta to coat with the sauce.
* Transfer to a serving bowl or platter, top with parmesan cheese and garnish with basil leaves.
* Serve with garlic bread.

POTATO AND CHORIZO GRATIN

Potato and Chorizo Gratin



Ingredients:

King Sue Chorizo Bilbao
1 kilo marble Potatoes
1 pack all purpose cream
1 bar cheddar cheese (easy melt) grated
½ cup parmesan cheese grated
1 bar (200gms) mozzarella cheese
Salt
Oil

Cooking Directions:

* Cut potatoes in half and boil with a little salt until done, let it cool.
* Cook chopped Chorizo in oil set it aside.
* Toss potatoes with all purpose cream, grated parmesan cheese and cheddar.
* Add in Chorizo bits. Left some for toppings.
* Put in baking dish and top with grated mozzarella cheese and chorizo.






OVEN BAKED BACON WITH VEGETABLES BRUSCHETTA

Vegetable Bruschetta


Ingredients:

3-4 slices King Sue Sliced Bacon
1 teaspoon olive oil
2 whole tomatoes, cubed
Portion of Zuchinni cubed
1 pc  green capsicum, cut into thin strips
1 French Baguette (small)
Olive oil cooking spray
1 large garlic clove, halved
150g mozzarella cheese, thinly sliced

Cooking Directions:

* Preheat oven toaster. Sprinkle olive oil, salt and pepper over the tomatoes, zucchini and bell pepper. Roast for about 8-10 minutes.
* Heat oil in a frying pan over medium heat. Cook bacon for 5 to 6 minutes or until golden and crisp. Remove and drain on paper towel.
* Preheat oven toaster. Cut four 2cm-thick slices from loaf.
* Heat bread in oven toaster for 1 to 2 minutes until golden. Rub both sides of bread with cut side of garlic clove. Top bread with capsicum, bacon and mozzarella. Place in oven toaster and cook for 2 minutes or until cheese melts.
* Serve immediately.




SWEET AND SOUR HAWAIIAN HAM

Sweet and Sour Hawaiian Ham


Ingredients:

500 gms King Sue Hawaiian Ham Loaf cubes
1/3 cup white or rice vinegar (Note: rice vinegar gives better results)
4 tablespoon brown sugar
1 tablespoon ketchup
1 teaspoon soy sauce
2 teaspoons cornstarch mixed with 4 teaspoons water

Cooking Directions:

* Mix the vinegar, brown sugar, ketchup, and soy sauce together and bring to a boil in a small pot.
* Mix together the cornstarch and water, add to the other ingredients and stir to thicken then pour in KING SUE HAWAIAN CUBED HAM.
 * If desired, you can add 1 green pepper, cut into chunks, and pineapple chunks as desired after adding the cornstarch. For a thicker sauce, increase the cornstarch to 4 teaspoons while keeping the water constant.
